Have you been as fascinated as I with all of the rainbow cakes and pancakes? What about some rainbow cookies? Perfect for St. Patrick's Day - don't you think?
I started with a bag of sugar cookie mix, but the refrigerated dough or even, heaven forbid, a sugar cookie dough from scratch would work.
Roll the mixed dough in a log and divide it in 6 equal pieces. Add a couple of drops of color to each section. (I used the standard grocery store colors) I started mixing the yellow and worked my way to the purple, washing my hands between each color.
Place the cookies on a cookie sheet and bake according to the directions on the mix/dough/recipe. Make sure you don't overcook them as the yellow has a tendency to brown.
Perfect for serving to all those leprechauns lurking around your house.

Flatten each color and place them between sheets of waxed paper. Roll the dough about as flat as possible.
Stack the colors on top of each other in this order:
yellow
orange
red
green
blue
purple
Roll the stack so the the yellow is on the outside. Chill in the refrigerator for an hour, then slice. (I turned the roll between each cut so that I didn't have a flat side) Cut each slice in half.Place the cookies on a cookie sheet and bake according to the directions on the mix/dough/recipe. Make sure you don't overcook them as the yellow has a tendency to brown.
